Base Ingredients

Method

Cooking the Rice

  1. 1

    Rinse the Rice

Place 1 cup of jasmine rice in a fine-mesh strainer and rinse under cold running water for about 1-2 minutes until the water runs clear. This helps remove excess starch.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed jasmine rice and 1.5 cups of water. Bring to a boil over medium-high heat.

  3. 3

    Simmer the Rice

Once boiling, reduce heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is tender and all the water is absorbed.

  4. 4

    Fluff the Rice

Remove the saucepan from heat and let it sit covered for an additional 5 minutes. Then fluff the rice gently with a fork.

Adding Flavor

  1. 5

    Combine Ingredients

In a separate saucepan, combine the cooked jasmine rice with 1 cup of coconut milk, 0.5 tsp of salt, 1 tbs of sugar, and 1 tsp of lime zest.

  2. 6

    Heat Mixture

Heat the mixture over medium heat, stirring occasionally, until it begins to simmer.

  3. 7

    Garnish and Serve

Once heated, remove from the heat and stir in the chopped cilantro and sliced green onions. Serve warm as a side dish or as a flavorful base for your favorite protein.
