Seasoning for Sushi Rice

Prepare Sushi Rice

Rinse the Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Combine the rinsed rice with 2 1/2 cups of water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce to low heat, cover, and simmer for about 18 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix 1 tablespoon of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Pour this mixture over the rice and gently fold it in. Allow to cool.

Using a sharp knife, slice the fresh tuna into thin strips or cubes.

Prepare the Nori
Place a bamboo sushi mat on a flat surface and lay one nori sheet shiny side down on the mat.

Add the Sushi Rice
Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to create a tight roll. Seal the edge of the nori with a little water.
Slice and Serve

Cut the Rolls
Using a sharp knife, slice the sushi roll into bite-sized pieces, wiping the knife with a damp cloth between cuts.

Arrange the sushi pieces on a serving platter, and serve with soy sauce, wasabi, and pickled ginger on the side.
