    Prepare the Fish

    Rinse the Hirame flounder fillets under cold water and pat them dry with paper towels. Make sure to remove any bones if necessary.

    Season the Fillets

    Sprinkle the sea salt and black pepper evenly over both sides of the fillets. Drizzle with fresh lemon juice on each side, allowing it to marinate for about 10 minutes.

    Heat the Olive Oil

    In a large skillet, heat the olive oil over medium heat until it shimmers but does not smoke.

    Cook the Fillets

    Place the seasoned Hirame fillets in the skillet and cook for about 3-4 minutes on one side. Carefully flip the fillets and cook for an additional 3-4 minutes on the other side, or until the fish is opaque and flakes easily with a fork.

    Remove the cooked fillets from the skillet and transfer them to a serving plate. Garnish with chopped fresh parsley and serve immediately with extra lemon wedges on the side.
