Preparation of Salmon

    Marinate the Salmon

    In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Allow the salmon to marinate for at least 30 minutes in the refrigerator.

    Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals until they are covered with ash.

    Prepare the Vegetables

    Wash and trim the asparagus, slice the bell peppers into strips, and cut the zucchini into half-moon shapes.

    In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling

    Grill the Salmon

    Place the marinated salmon fillets on the grill, skin side down. Close the grill lid and cook for about 6-8 minutes, or until the salmon easily flakes with a fork. If desired, sprinkle fresh dill on top before serving.

    On the same grill, place the seasoned vegetables on a grill pan or directly on the grates. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
