For the Grilled Miso Black Cod

    Prepare the Marinade

    In a bowl, mix the white miso paste, sake, mirin, brown sugar, salt, and black pepper until smooth.

    Marinate the Cod

    Place the black cod fillets in a shallow dish and pour the marinade over them. Ensure the fish is fully coated. Cover and refrigerate for at least 1 hour or up to 24 hours for best flavor.

    Grill the Cod

    Preheat the grill to medium-high heat. Remove the cod from the marinade and shake off excess. Grill for about 4-5 minutes per side or until the fish is cooked through and flakes easily with a fork.

For the Sautéed Bok Choy

    Prep the Bok Choy

    Rinse the baby bok choy under cold water and slice them in half lengthwise.

    Sauté the Aromatics

    In a large skillet, heat olive oil over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant.

    Add the bok choy halves to the skillet, cut side down, and cook for about 2-3 minutes until they start to soften. Flip them over, drizzle with soy sauce and sesame oil, and season with salt and black pepper. Cook for another 2-3 minutes until tender.

For the Ginger Soy Glaze

    In a small saucepan, combine soy sauce, grated ginger, honey, water, and cornstarch. Whisk until smooth.
