Preparing Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or saucepan. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds or until sugar dissolves. Pour this mixture over the warm rice and gently fold to combine. Allow to cool to room temperature.

Slice the avocado and cucumber into thin strips. Mince the garlic clove.

Prepare Nori Sheets
Lay a bamboo sushi mat on a clean surface. Place a sheet of nori, shiny side down, on the mat.

Spread Rice and Filling
Wet your hands to prevent sticking, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge. Spoon a line of the Green Goddess filling along the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and roll it over the filling, pressing gently but firmly. Continue rolling until the sushi is completely rolled up. Seal the edge with a bit of water.

Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds. Serve with soy sauce on the side.
