Pork Belly
Glaze
Method
Preparing the Pork Belly
- 1
Preheat the Oven
Preheat your oven to 300°F (150°C).
- 2
Season the Pork Belly
Rub the pork belly with salt and black pepper on both sides.
- 3
Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork belly for 4-5 minutes on each side until golden brown.
- 4
Bake the Pork Belly
Once seared, transfer the skillet to the preheated oven and bake for 2 hours, or until the pork is tender.
Preparing the Glaze
- 5
Make the Glaze
In a saucepan over medium heat, combine pear, ginger, brown sugar, soy sauce, rice vinegar, garlic, sesame oil, and red pepper flakes. Stir well and bring to a simmer.
- 6
Reduce the Glaze
Let the mixture simmer for 15-20 minutes, until it thickens slightly. Stir occasionally to prevent burning.
Finishing Touches
- 7
Glaze the Pork Belly
After 2 hours of baking, remove the pork belly from the oven and brush the glaze generously over the top.
- 8
Broil
Increase the oven temperature to broil. Return the pork belly to the oven for an additional 5-10 minutes, watching carefully to prevent burning, until the glaze is caramelized.
- 9
Rest and Serve
Remove the pork belly from the oven and let it rest for 10 minutes before slicing. Serve with the remaining glaze drizzled over the top.
