    Prepare the Crust

    In a mixing bowl, combine the graham cracker crumbs and sugar. Pour in the melted butter and mix until the crumbs are evenly coated and the mixture resembles wet sand.

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup to ensure it's tightly packed.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes or until lightly golden. Remove from the oven and let it cool completely.

Filling

    Prepare the Cream Cheese Mixture

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar, mixing until fully incorporated.

    Add Flavorings

    Add the vanilla extract and lemon juice to the cream cheese mixture and mix until combined.

    Whip the Cream

    In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

    Pour the cream cheese filling into the cooled crust and spread it evenly. Cover and refrigerate for at least 4 hours or until set.

Topping

    Just before serving, wash and dry the fresh berries and mint leaves. Arrange the berries on top of the set cheesecake filling.

    Sprinkle the mint leaves over the berries for added flavor and presentation.
