Preparing the Vegetables

    Preheat your oven to 425°F (220°C).

    Prepare the Vegetables

    Peel and chop the carrots, parsnips, and potatoes into uniform pieces (about 1-inch).

    Season the Vegetables

    In a large bowl, toss the chopped vegetables with olive oil, salt, black pepper, and fresh thyme until well coated.

    Roast the Vegetables

    Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until tender and golden brown, stirring halfway through.

Cooking the Salmon

    While the vegetables are roasting, pat the salmon fillets dry with paper towels. This helps to achieve crispy skin.

    Rub the salmon fillets with olive oil, salt, black pepper, and lemon juice.
