Preparing the Vegetables

Preheat the Oven
Preheat your oven to 425°F (220°C).

Season the Vegetables
In a large bowl, toss the chopped vegetables with olive oil, salt, black pepper, and fresh thyme until well coated.

Roast the Vegetables
Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until tender and golden brown, stirring halfway through.
Cooking the Salmon

Prepare the Salmon
While the vegetables are roasting, pat the salmon fillets dry with paper towels. This helps to achieve crispy skin.

Season the Salmon
Rub the salmon fillets with olive oil, salt, black pepper, and lemon juice.

Cook the Salmon
Heat a non-stick skillet over medium-high heat. Place the salmon fillets skin-side down and cook for 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until the salmon is cooked through.
Making the Dill Sauce

Combine Ingredients
In a small bowl, combine the Greek yogurt, chopped dill, lemon juice, minced garlic, and salt. Mix well until smooth.
Serving

Plate the Dish
On each plate, serve the crispy skin salmon alongside the roasted root vegetables. Drizzle the dill sauce over the salmon or serve it on the side.
