Chicken Marinade

Pickling Brine

Method

Chicken Preparation

  1. 1

    Marinate the Chickens

In a large bowl, combine salt, black pepper, paprika, garlic powder, olive oil, and lemon juice. Rub this mixture all over the baby chickens, ensuring they are well-coated. Let them marinate in the refrigerator for at least 1 hour, or up to overnight for best flavor.

  2. 2

    Preheat Oven

Preheat your oven to 375°F (190°C) while the chickens are marinating.

Cooking the Chickens

  1. 3

    Roast the Chickens

Place the marinated baby chickens in a roasting pan. Roast in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Baste the chickens with their own juices halfway through cooking.

Pickling Process

  1. 4

    Prepare the Pickling Brine

While the chickens are roasting, prepare the pickling brine. In a saucepan, combine water, apple cider vinegar, sugar, salt, mustard seeds, peppercorns, and bay leaves. Bring to a boil over medium heat, stirring until the sugar and salt are dissolved. Remove from heat and let cool.

  2. 5

    Combine with Chickens

Once the chickens are done roasting, let them rest for about 10 minutes. Then, chop them into bite-sized pieces. Place the chicken pieces into a large jar or container, and pour the cooled pickling brine over the top. Add dill sprigs.

  3. 6

    Pickling Process

Seal the jar and refrigerate for at least 24 hours before serving to allow the flavors to meld. The pickled chicken can be kept in the refrigerator for up to 1 week.
