Preparing the Baby Chicken

    In a bowl, mix olive oil, minced garlic, lemon juice, salt, black pepper, and fresh herbs. Rub this mixture all over the baby chicken, ensuring it gets into the cavity as well. Let it marinate for at least 30 minutes or up to 2 hours in the refrigerator.

    Preheat your oven to 375°F (190°C) while the chicken is marinating.

    Roast the Chicken

    Place the marinated chicken in a roasting pan. Roast in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear when pierced.
