    Bring Steak to Room Temperature

    Remove the Australian Wagyu Tomahawk Steak from the refrigerator and let it sit at room temperature for at least 1 hour before cooking. This helps the steak cook more evenly.

    Preheat your grill to high heat, around 450°F to 500°F (232°C to 260°C). If using charcoal, allow the coals to turn white hot.

    Season the Steak

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, and smoked paprika. Rub the mixture all over the steak, ensuring an even coating. Drizzle olive oil over the steak and rub it in as well.

Cooking

    Place the seasoned Wagyu Tomahawk on the hot grill. Sear each side for about 4-5 minutes to get a nice crust. Then, move the steak to a cooler part of the grill to cook more slowly, aiming for an internal temperature of 130°F (54°C) for medium-rare.

    Rest the Steak

    Once the desired temperature is reached, remove the steak from the grill and let it rest on a cutting board for 10-15 minutes. This allows the juices to redistribute.

    After resting, slice the Wagyu Tomahawk against the grain into thick slices. Serve with fresh rosemary and lemon wedges for added flavor.
