Prepare the Potatoes
Preheat the oven to 400°F (200°C). Cut the rosemary potatoes into wedges, toss in olive oil, salt, and chopped rosemary, and spread on a baking sheet. Roast for about 25-30 minutes until golden and crispy.

Cook the Scramble
In a skillet, heat 1 tablespoon of olive oil over medium heat. If using eggs, beat them and pour into the skillet. If using tofu, crumble it into the skillet. Add the chopped spinach, diced tomatoes, and sliced green onions. Season with salt and black pepper.

Finish the Scramble
Cook the mixture for about 5-7 minutes, stirring gently until the eggs are fully cooked or the tofu is heated through. If desired, add Chihuahua cheese or vegan mozzarella during the last minute of cooking and allow it to melt.

Prepare the Toast
While the scramble is cooking, toast your bread slices to your liking.
