Prepare the Rice
In a medium-sized pot, add 2 cups of water and bring it to a boil. Add the brown rice and a pinch of salt. Lower the heat, cover, and simmer for about 40-45 minutes or until the rice is tender and the water is absorbed.

Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, yellow bell pepper, and minced garlic. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

Combine Ingredients
Add the cooked pinto beans, tomato sauce, sliced green olives, and chopped cilantro to the skillet. Stir well to combine and let it simmer for about 10 minutes. Season with salt and pepper to taste.

Serve
Once the rice is cooked, fluff it with a fork and serve it on a plate. Top with the bean mixture and garnish with sweet-hot pineapple salsa and pumpkin seeds if desired.
