Preparation

Prepare the Beef
Cut the beef chuck into 2-inch cubes and season with salt and pepper.

Chop Aromatics
Mince the garlic and ginger, and chop the green onions, keeping the green parts separate for garnish.
Cooking

Brown the Beef
In a large skillet, heat some oil over medium-high heat. Add the beef cubes in batches and brown on all sides. Transfer to a slow cooker.

Add Ingredients to Slow Cooker
To the slow cooker, add the beef broth, soy sauce, minced garlic, minced ginger, and star anise. Stir to combine.

Slow Cook
Cover and cook on low for 6-8 hours or until the beef is tender.

Prepare the Noodles
About 30 minutes before serving, cook the rice noodles according to package instructions. Drain and set aside.

Add Optional Vegetables and Shrimp
If using, add the chopped vegetables and shrimp to the slow cooker during the last 30 minutes of cooking.
Serving

Assemble the Soup
In serving bowls, place a portion of the cooked rice noodles. Ladle the beef soup over the noodles.

Top with chopped green onions and serve hot.
