Prepare the Dumpling Filling

    In a large mixing bowl, combine the peeled and deveined shrimp, ground pork, finely chopped chives, minced ginger, minced garlic, soy sauce, sesame oil, salt, and white pepper. Mix thoroughly until well combined.

    Cover the bowl with plastic wrap and refrigerate the filling mixture for at least 30 minutes to allow the flavors to meld.

Make the Dumpling Wrappers

    Prepare the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add the hot water, stirring with a fork until the dough starts to come together.

Assemble the Dumplings
