Dough

Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

In a mixing bowl, combine the ground pork, chopped shrimp, minced ginger, minced garlic, soy sauce, sesame oil, chopped green onions, salt, pepper, and chicken broth. Mix well until all ingredients are incorporated. Let the filling marinate in the refrigerator for 20 minutes.

Assembly

  1. 3

    Form the XLB

After the dough has rested, divide it into 6 equal pieces. Roll each piece into a thin circle, about 3 inches in diameter. Place a tablespoon of filling in the center of each dough circle. Carefully pleat the edges of the dough to create a pouch, pinching the top to seal it.

Cooking

  1. 4

    Steam the XLB

Prepare a steamer by lining it with parchment paper to prevent sticking. Place the filled dumplings in the steamer, leaving space between them. Steam over boiling water for about 8-10 minutes until they are cooked through.

Dipping Sauce Preparation

  1. 5

    Make the Dipping Sauce

In a small bowl, mix together soy sauce, rice vinegar, chili oil, and grated ginger. Stir well to combine and set aside.
