Dough

Method

Dough Preparation

  1. 1

    Mixing the Dough

In a large bowl, combine the all-purpose flour and salt. Gradually add water while mixing with your hand until the dough comes together.

  2. 2

    Kneading the Dough

Knead the dough on a floured surface for about 10 minutes until smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

  1. 3

    Preparing the Filling

In a mixing bowl, combine the ground pork, minced shrimp, pork savory soup, minced ginger, soy sauce, sesame oil, salt, and white pepper. Mix well until all ingredients are combined.

  2. 4

    Chilling the Filling

Cover the filling with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Dumpling Assembly

  1. 5

    Shaping the Dumpling

After the dough has rested, divide it into small pieces (about 1 inch each). Roll each piece into a thin circle. Place a spoonful of filling in the center of each circle.

  2. 6

    Sealing the Dumpling

Pinch the edges of the dough to seal the filling inside, creating pleats as you go. Make sure the dumpling is tightly sealed.

Cooking the Dumplings

  1. 7

    Pan-frying

In a large skillet, heat vegetable oil over medium heat. Place the dumplings in the skillet and fry for 2-3 minutes until the bottoms are golden brown.

  2. 8

    Steaming

Add 1 cup of water to the skillet and cover immediately. Allow the dumplings to steam for about 8-10 minutes until cooked through.

  3. 9

    Serving

Remove the lid and let the dumplings sit for another minute. Serve hot with soy sauce or vinegar for dipping.
