Making the Dough

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for about 10 minutes until frothy.

    Prepare Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise for 1 hour or until doubled in size.

Preparing the Filling

    Mix Filling Ingredients

    In a mixing bowl, combine ground pork, cooled pork bone broth, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly to combine.

    Chill Filling

    Cover the filling and place in the refrigerator to chill for about 30 minutes, allowing the flavors to meld.

Assembling the Dumplings

    Roll Out Dough

    After the dough has risen, punch it down and transfer to a floured surface. Divide into 12 equal pieces. Roll each piece into a circle about 4 inches in diameter.

    Fill Dumplings

    Place a tablespoon of filling in the center of each dough circle. Carefully pleat and pinch the edges together to seal.

Cooking the Dumplings

    Pan-fry Dumplings

    Heat vegetable oil in a large skillet over medium-high heat. Place the dumplings in the skillet, flat side down, and fry for about 2-3 minutes until golden brown.

    Steam Dumplings

    Add 1 cup of water to the skillet and cover immediately. Allow the dumplings to steam for about 8-10 minutes, until cooked through.

    Garnish with chopped scallions and serve with soy sauce on the side for dipping.
