Method

Preparation

  1. 1

    Prepare the Garlic

Peel and thinly slice the garlic cloves. Set aside.

  2. 2

    Measure the Ingredients

Gather all your ingredients and measure them out: 1 cup of vegetable oil, 1 cup of dried red chili flakes, 5 cloves of garlic, 1 tsp of salt, and any optional flavor enhancers you wish to include.

Cooking

  1. 3

    Heat the Oil

In a small saucepan or skillet, pour in the vegetable oil and heat it over medium heat until it shimmers but does not smoke.

  2. 4

    Add Garlic

Once the oil is hot, add the sliced garlic cloves. Stir them gently and cook until they turn golden brown, about 2-3 minutes. Be careful not to burn them.

  3. 5

    Add Chili Flakes and Salt

After the garlic is golden, remove the saucepan from heat and immediately add the dried red chili flakes and salt. Stir to combine. The residual heat will infuse the oil with the flavors of the garlic and chili flakes.

  4. 6

    Incorporate Optional Ingredients

If using, add sesame seeds, Szechuan peppercorns, and grated ginger to the mixture. Stir well to ensure everything is evenly distributed.

  5. 7

    Cool and Store

Allow the chili oil to cool completely. Once cooled, transfer it to a clean glass jar or bottle. Store in a cool, dark place or refrigerate for longer shelf life.
