Wonton Wrapper

1. Prepare the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center, add the egg and gradually mix in the water using your hands or a fork until a dough forms.

2. Knead the Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

3. Roll Out the Dough

After resting, divide the dough into small portions. Roll each portion out as thin as possible, and cut into 3-inch squares for the wonton wrappers.

Filling

4. Prepare the Filling

In a mixing bowl, combine the ground chicken, grated carrot, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix thoroughly until well combined.

5. Fill the Wontons

Take a wonton wrapper and place about 1 teaspoon of filling in the center. Moisten the edges with water, fold the wrapper over to form a triangle, and press to seal. You can also bring the two corners together to make a traditional wonton shape.

Chili Oil

6. Make the Chili Oil

In a small saucepan, heat the vegetable oil over medium heat. Once hot, remove from heat and add the dried red chili flakes and Sichuan peppercorns. Let it steep for about 10 minutes until the oil is infused with the flavors.

Cooking Wontons

7. Boil the Wontons

Bring a large pot of salted water to a boil. Carefully add the filled wontons, and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.

8. Serve

Place the cooked wontons in a serving bowl and drizzle with the prepared chili oil. You can also garnish with additional green onions if desired.
