Method
Beef Preparation
- 1
Prepare the Beef
Rinse the beef brisket under cold water to remove any impurities. Pat it dry with paper towels.
- 2
Boil the Beef
Place the beef brisket in a large pot and cover it with 2 liters of water. Bring to a boil over high heat. Once boiling, reduce the heat and let it simmer for about 10 minutes.
- 3
Skim the Foam
During the simmering, skim off any foam that rises to the surface with a ladle to keep the broth clear.
- 4
Remove and Drain
After 10 minutes, remove the beef brisket from the pot and drain it. Set it aside to cool slightly.
Marinade
- 5
Prepare Marinade
In a separate bowl, combine soy sauce, cooking wine, sugar, star anise, ginger, crushed garlic cloves, chopped green onion, and Sichuan peppercorns.
- 6
Combine Ingredients
Mix all the marinade ingredients thoroughly until the sugar dissolves.
- 7
Marinate the Beef
Place the slightly cooled beef brisket into a deep dish or pot. Pour the marinade over the beef, ensuring it is well coated.
- 8
Cover and Refrigerate
Cover the dish with plastic wrap or a lid and refrigerate for at least 12 hours, preferably overnight.
- 9
Slice the Beef
After marinating, remove the beef from the marinade and slice it thinly against the grain. The beef can be served cold or briefly heated upon request.
