Prepare the Broth

Step 1: Roast the Bones
Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast them in the oven for about 30 minutes until they are browned.

Step 2: Simmer the Broth
In a large pot, add the roasted bones and cover them with 12 cups of water. Add the quartered onion, smashed garlic cloves, sliced ginger, soy sauce, and star anise. Bring to a boil, then reduce heat to a simmer. Cook for at least 3 hours, skimming off any foam that forms on the surface.

Step 3: Season the Broth
After simmering, taste the broth and season with salt as needed. Strain the broth through a fine mesh sieve to remove the solids and return the liquid to the pot.
Cook the Noodles and Beef

Step 4: Prepare the Noodles
Follow the package instructions to cook the rice noodles (or egg noodles) until al dente. Drain and set aside.

Step 5: Cook the Beef
In the simmering broth, add the thinly sliced beef sirloin. Cook for about 2-3 minutes until the beef is just cooked through.

Step 6: Assemble the Soup
In bowls, place a serving of noodles, ladle the hot broth with beef over the noodles, and top with chopped green onions, fresh cilantro, and bean sprouts. Serve with lime wedges on the side.
