Margarita Pitcher

Method

Margarita Pitcher

  1. 1

    Make fresh lime juice

Roll the limes firmly on the countertop to loosen juices. Cut limes in half and juice until you have about 1 cup (approximately 8–10 medium limes). Strain the juice through a fine-mesh sieve to remove pulp and seeds if you prefer a smoother pitcher.

  2. 2

Prepare simple syrup (if not using bottled agave)

In a small saucepan combine 1 cup granulated sugar and 1 cup water. Bring to a gentle simmer, stirring until the sugar fully dissolves. Remove from heat and cool to room temperature. Alternatively, use 1 cup agave syrup and skip heating.

  3. 3

    Salt the rim (optional)

Pour 2 tablespoons kosher or coarse sea salt onto a small plate. Rub a lime wedge around the rim of each serving glass, then dip the rim into the salt to coat. Set glasses aside to dry while you finish the pitcher.

  4. 4

    Assemble the pitcher

In a 2–3 quart pitcher combine 2 cups tequila, 1 cup orange liqueur, 1 cup fresh lime juice, and 1 cup simple syrup (or agave). Add 1 cup cold water to dilute slightly for balanced strength. Stir vigorously for 20–30 seconds to integrate the ingredients.

  5. 5

    Chill and sweeten to taste

Taste the mixture and adjust sweetness or acidity as desired: add up to 2 tablespoons additional simple syrup (or agave) for a sweeter drink, or an additional tablespoon of lime juice for more tartness. For a lighter pitcher, add extra cold water (up to 1/2 cup).

  6. 6

    Add ice and garnish

Just before serving, add 6 cups of ice to the pitcher to chill without over-diluting. Float 6–8 lime wheels or wedges on top for garnish and visual appeal.

  7. 7

    Serve

Fill salted or plain glasses with ice, pour margarita from the pitcher into each glass (about 6–8 servings depending on glass size). Garnish each glass with a lime wedge if desired.

  8. 8

    Storage note

If you need to make the pitcher ahead, combine tequila, orange liqueur, and simple syrup and keep chilled. Add fresh lime juice, ice, and water just before serving for best flavor. The mixed pitcher (with lime juice) will keep refrigerated, covered, for up to 24 hours; stir again before serving.
