Method

Taco Bowls (fried flour shells)

    Warm the tortillas briefly in a microwave (about 10–15 seconds) or in a dry skillet so they are pliable and less likely to crack when shaped.

    Pour vegetable oil into a deep skillet or pot to a depth of about 1-inch and heat over medium-high until it reaches 350°F (about 175°C) or a small piece of tortilla sizzles immediately.

    Using tongs, carefully fold one warm tortilla over the handles of a metal taco bowl form, an inverted metal ladle, or drape over the back of two wooden spoons across the pan so it forms a bowl shape. Hold it steady with tongs or use a metal bowl-shaped mold.

    Lower the shaped tortilla into the hot oil and fry 45–75 seconds per side, turning gently if needed, until golden brown and crisp. Fry in batches; avoid crowding. Sprinkle each finished bowl lightly with 1/8 tsp salt while hot.

    Transfer fried bowls to a wire rack set over a baking sheet to drain and stay crisp. Repeat with remaining tortillas. Allow to cool slightly before assembly.

Seasoned Ground Beef

    Heat 1 tsp vegetable oil in a skillet over medium heat. Add the chopped onion and cook 2–3 minutes until softened and translucent.

    Add the minced garlic and cook 30 seconds until fragrant.

    Add the ground beef, breaking it up with a spatula. Cook until no longer pink, about 6–8 minutes, allowing some browning for flavor.

    Stir in chili powder, cumin, smoked paprika, 0.75 tsp salt, and 0.25 tsp black pepper. Mix in the tomato paste and water, stirring to combine and create a saucy coating. Simmer 2–3 minutes until slightly thickened. Taste and adjust seasoning.

    Remove from heat and keep warm until assembly.

Pico de Gallo

    In a medium bowl combine diced tomatoes, diced white onion, chopped cilantro, minced jalapeño, lime juice, and 0.5 tsp salt.

    Stir gently, then let rest at room temperature 10–15 minutes to allow flavors to meld. Taste and adjust salt or lime as desired.

Cheese Dip (Queso)

    In a small saucepan over low heat, combine milk and cream cheese; stir until cream cheese is melted and mixture is warm and smooth (do not boil).

    Gradually add the chopped white American cheese (or shredded) in small handfuls, stirring constantly until fully melted and smooth.

    Stir in diced green chiles, 1/4 tsp ground cumin, optional hot sauce, and a pinch of black pepper. If the dip is too thick, add up to 2 tbsp more milk to reach a pourable but still creamy consistency.

    Keep warm on the lowest heat or transfer to a small insulated container for assembly.

Assembly & Garnish

    Place one fried flour taco bowl on each serving plate.

    Spoon about 3/4 cup of the warm seasoned ground beef into each bowl (divide beef evenly).

    Spoon 2–3 tbsp of warm cheese dip over the beef in each bowl (adjust to preference).

    Top with 2–3 tbsp pico de gallo, then sprinkle about 2 tbsp shredded cheese over each bowl so it melts lightly from the warm dip and beef.

    Add shredded lettuce around or on top for freshness, dollop 1 tbsp sour cream, and scatter sliced black olives if using.

    Garnish with cilantro leaves and serve immediately so shells remain crisp. Provide extra cheese dip, pico, and lime wedges on the side if desired.
