Peppers & finishing
Sear & toss
Optional finishing sauces
Method
Prep
- 1
Wash the peppers and pat them dry. Leave stems intact to hold them while cooking. If any peppers are very large, halve lengthwise and remove seeds if you prefer less heat (traditional toreados usually leave peppers whole). Slice the garlic thinly. Cut lime into wedges. Have cilantro and optional sauces ready.
Sear & blister
- 2
Heat the pan
Place a heavy skillet (cast-iron or stainless steel) over medium-high heat. Add the vegetable oil and let it get hot until it shimmers but is not smoking, about 1–2 minutes.
- 3
Sear the peppers
Add the whole peppers in a single layer. Press them gently so one side contacts the pan. Let them blister and char on the first side without moving for about 1–2 minutes until dark blisters form.
- 4
Toss and blister evenly
Use tongs to toss and flip the peppers frequently so they blister on multiple sides. Continue for 4–6 minutes until most skin is blistered and peppers have softened but still hold shape.

Optional saucing
If using, drizzle chile de arbol salsa over the peppers or spoon crema alongside them and gently toss once to combine. Sprinkle chopped cilantro if desired.
Serve
- 8
Transfer chiles to a serving plate. Serve hot with lime wedges to squeeze over before eating. Chiles toreados are traditionally served as a side, taco garnish, or snack; instruct guests to hold by the stem and eat with lime and crema as desired.
