Prepare Cheese & Aromatics

    Grate and Soften

    Grate the sharp cheddar and monterey jack and set them in a bowl. Soften the cream cheese at room temperature for about 20–30 minutes so it blends smoothly.

    Mince the onion and garlic and measure the spices and milk so everything is ready to go (mise en place).

Make Roux & Base

    In a medium saucepan over medium heat, melt the unsalted butter until foaming but not browned (about 1–2 minutes). Add the minced onion and cook, stirring, until softened and translucent, about 2–3 minutes.

    Add the minced garlic and cook for 30 seconds until fragrant. Sprinkle in the all-purpose flour and stir constantly for 1–1.5 minutes to cook the raw flour taste and form a light roux.

    Slowly whisk in the whole milk (start with about half, then add the rest) to avoid lumps. Continue whisking until the mixture thickens into a smooth, slightly thickened béchamel, about 2–3 minutes.

Incorporate Cheese

    Reduce heat to low. Cut the softened cream cheese into small pieces and whisk into the warm milk mixture until fully melted and incorporated.

    Add the grated cheddar and monterey jack in two additions, stirring and allowing each addition to melt fully before adding the next. Keep the heat low to prevent graininess — gentle heat preserves a smooth texture.

    Once all cheese is incorporated, stir in the ground mustard, smoked paprika, kosher salt, and black pepper. Taste and adjust seasoning as needed.

Finish & Serve

    Remove the saucepan from heat. Stir in the fresh lime juice and chopped cilantro. If using, stir in the diced pickled jalapeño for heat and tang.

    Transfer the cheese dip to a warmed serving bowl. If the dip thickens too much as it cools, thin with 1–2 tablespoons of milk and stir until smooth.
