Dry Beans and Soak

Sort and rinse the dried beans: spread beans on a tray or counter and remove any small stones or shriveled beans, then rinse thoroughly under cold running water.

Place the rinsed beans in a large bowl and cover with 6–8 cups cold water. Add 1/4 tsp baking soda and stir gently; the baking soda helps soften skins and reduces cooking time. Soak 8–12 hours or overnight at room temperature.

After soaking, drain the beans and rinse. Reserve the soaking water or discard — for this recipe use fresh water for cooking to control flavor.
Cook Beans

Simmering
Place the drained beans in a large pot and add 6 cups fresh cold water (about 3 cups water per cup of beans). Bring to a gentle boil over high heat, then immediately lower to a simmer. Add the bay leaf. Partially cover and simmer gently, stirring occasionally, until beans are tender but not falling apart, 45–75 minutes depending on bean age. Skim any foam that rises to the surface.

Test doneness after 45 minutes by biting a bean: it should be creamy inside with a tender skin. If needed, continue simmering and check every 10–15 minutes. Add water (hot) if level drops to keep beans just covered.

When beans are tender, turn off heat. Reserve 1/2 cup of the cooking liquid (aquafaba) and drain the rest. Discard the bay leaf.

While beans finish cooking, heat a large skillet or shallow saucepan over medium heat. Add 2 tablespoons olive oil. When oil shimmers, add the diced onion and a pinch of salt, and sauté until translucent and starting to color, about 6–8 minutes.

Add the minced garlic and cook, stirring, for 30–60 seconds until fragrant (do not brown). Stir in smoked paprika and dried thyme and cook 15–30 seconds to bloom the spices.

Add the cooked, drained beans to the skillet and gently fold to coat in the aromatics. Add 1/2 cup of the reserved bean cooking liquid to help form a light sauce and prevent sticking. Simmer together for 3–5 minutes so flavors meld.

Season with 2 teaspoons coarse salt and 3/4 teaspoon freshly ground black pepper. Taste and adjust: add more salt or pepper if needed. If you want heat, add 1/4 tsp red pepper flakes now.

Remove skillet from heat. Stir in 1 tablespoon fresh lemon juice and 2 tablespoons chopped parsley to brighten flavors. Drizzle with a little extra virgin olive oil if desired.

Serve warm as a side dish, spoon over toasted bread for a simple bruschetta-style topping, or use as a base for salads and grain bowls. Leftovers keep in an airtight container in the refrigerator 3–4 days; beans will thicken — loosen with reserved cooking liquid when reheating.
