Cheesecake

Method

Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes, then remove from the oven and set aside to cool.

  2. 2

    Make the cheesecake filling

In a large mixing bowl, combine the mascarpone cheese, cream cheese, and granulated sugar. Beat with an electric mixer until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  3. 3

    Bake the cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake in the oven for an additional hour to cool gradually.

  4. 4

    Cool and serve

Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight. Serve chilled with pears, tahini, and a scoop of concord grape sorbet on the side.
