Pavlova Base

Prepare the Egg Whites

Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper. In a clean bowl, beat the egg whites until soft peaks form.

Add Sugar

Gradually add the granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy.

Mix Dry Ingredients

In a small bowl, mix the cornstarch and vinegar. Add this to the egg white mixture along with the smoked vanilla bean paste and gently fold together.

Shape Pavlova

Spoon the meringue onto the prepared baking sheet in a circular shape, creating a slight well in the center.

Bake

Bake for about 1 hour or until the pavlova is dry to the touch. Turn off the oven and let it cool inside.

Infuse Cream

In a saucepan, combine heavy cream, milk, and fig leaves. Heat until just simmering, then cover and let steep for 30 minutes.

Prepare Gelatin

In a small bowl, sprinkle gelatin over a tablespoon of cold water and let it bloom.

Combine Mixtures

Strain the cream mixture to remove fig leaves. In a bowl, whisk egg yolks and sugar until pale. Slowly add the warm cream mixture while whisking.

Heat Mixture

Return the mixture to the saucepan and cook over low heat until it thickens slightly. Remove from heat and stir in the bloomed gelatin and vanilla extract.

Chill

Pour the mixture into molds and refrigerate until set, about 4 hours.

Prepare Figs

Chop fresh figs and combine them with sugar, amaro liqueur, and lemon juice in a saucepan.

Cook Jam

Cook over medium heat, stirring occasionally, until the mixture thickens, about 20 minutes.

Cool and Store

Allow to cool before transferring to a jar. Refrigerate until ready to use.

Meletti Ice Cream

Make Ice Cream Base

In a mixing bowl, combine heavy cream, sugar, Meletti liqueur, and vanilla extract. Mix until sugar is dissolved.

Chill Mixture

Chill the mixture in the refrigerator for at least 1 hour.

Churn Ice Cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.

Freeze

Transfer the churned ice cream to a container and freeze until firm, about 4 hours.
