Rinse and Cook Rice

Rinse 2 cups short-grain rice under cold water until the water runs mostly clear (3–4 rinses). Drain and combine with 2 1/4 cups water in a rice cooker or heavy pot. Cook according to rice cooker instructions or bring to a boil, reduce to low, cover and simmer 14–16 minutes until water is absorbed. Let rest covered 10 minutes. Fluff and stir in 1 tsp sesame oil; keep warm.

Tofu

Press and Marinate

Wrap the 14 oz block of firm tofu in paper towels or a clean cloth and press with a weight for 15–20 minutes to remove excess moisture. Slice or cube tofu into 1/2–3/4-inch pieces. Toss gently with 2 tbsp cornstarch to lightly coat. Mix 1 tbs soy sauce, 1/2 tsp minced garlic and 1/2 tsp sesame oil; toss tofu briefly to coat.

Pan-Fry Tofu

Heat 2 tbsp neutral oil in a nonstick or cast-iron skillet over medium-high heat. Add tofu pieces in a single layer and fry 3–4 minutes per side until golden and crisp. Transfer to a paper towel-lined plate and season lightly with salt while hot. Keep warm.

Vegetable Toppings

Blanch Spinach

Bring a pot of salted water to a boil. Add spinach and blanch 20–30 seconds until wilted. Drain and immediately plunge into ice water to stop cooking. Squeeze out excess water, then toss with 1/4 tsp salt, 1/2 tsp sesame oil and 1/2 tsp toasted sesame seeds. Set aside.

Cook Bean Sprouts

In the same pot, blanch 2 cups mung bean sprouts 30–45 seconds until tender-crisp. Drain and toss with 1/4 tsp salt, 1/2 tsp sesame oil and 1/2 tsp minced garlic. Set aside.

Sauté Carrot, Zucchini and Mushrooms

Julienne 1 large carrot and slice 1 small zucchini into thin half-moons. Slice mushrooms. Heat 1 tbsp neutral oil in a skillet over medium heat. Sauté carrot 2–3 minutes until slightly softened; season with a pinch of salt and remove. Add another 1 tbsp oil and sauté zucchini 2 minutes until just tender; remove. Sauté mushrooms with a pinch of salt and 1/2 tsp minced garlic 3–4 minutes until browned and any liquid evaporates. Keep each vegetable separate for plating.

Prepare Green Onion

Thinly slice 2 green onions on the bias and reserve for garnish and mixing into vegetables if desired.

Sauce & Seasonings

Make Bibimbap Sauce

Whisk together 3 tbs gochujang, 1 tbs sesame oil, 1 tsp rice vinegar, 1 tsp soy sauce and 1 tsp honey (or sugar) until smooth. Taste and adjust heat or sweetness. Stir in 1 tsp toasted sesame seeds. Set aside.

Assemble in Dolsot (Stone Bowl)

Heat the Stone Bowl

If using a dolsot, place empty stone bowl over medium-low burner for 5–7 minutes to preheat (or heat in a 400°F / 200°C oven for 10 minutes). Drizzle 1 tsp sesame oil into the hot bowl and swirl to coat bottom and sides—this helps form the crispy rice crust.

Layer Rice and Toppings

Spoon warm rice into the bottom of the heated bowl and press gently to create an even layer. Arrange the prepared spinach, bean sprouts, carrots, zucchini, mushrooms and pan-fried tofu in separate sections on top of the rice. Place 1–2 fried eggs on top if using. Sprinkle sliced green onion, a pinch of gochugaru (optional) and shredded kim if desired.

Final Cook for Crispy Crust

Return the filled dolsot to the burner on low and heat 2–4 minutes until you hear a light sizzle and rice begins to crisp at the edges. Be careful not to scorch; adjust heat as needed.

Serve

Serve and Mix

Bring the hot dolsot to the table (use oven mitts). Place a bowl for each diner. Spoon sauce over each serving (adjust amount to taste), then mix vigorously so tofu and vegetables combine with rice and sauce and you get bits of crispy rice. Serve immediately—caution: bowl will remain hot for a long time.
