Prepare Noodles & Cooling Water

Boil water and cook noodles

Bring a large pot of water to a rolling boil. Add the naengmyeon or buckwheat noodles and cook according to package instructions (usually 3–4 minutes) until just cooked but still chewy (al dente). Stir occasionally to prevent clumping.

Prepare a large bowl of cold water with ice cubes (about 1 L water + ice). Once noodles are cooked, immediately drain them in a colander and rinse thoroughly under cold running water to remove surface starch and cool them quickly. Transfer noodles to the ice water bath and swish them gently for 30–60 seconds until fully chilled. Drain well in a colander, shaking off excess water.

Make Bibim Sauce

In a medium mixing bowl combine 3 tbs gochujang, 1 tbs gochugaru, 2 tbs rice vinegar, 1 tbs soy sauce, 1 tbs sugar, 1 tsp minced garlic and 1 tsp sesame oil. Add 2 tbs warm water to loosen the mixture and whisk until smooth. Taste and adjust: add more sugar if too sour, more vinegar if too mild, or extra gochugaru for heat.

Cucumber & Radish

Julienne the cucumber and Korean radish (or daikon) into thin matchsticks. Lightly sprinkle each with a pinch of salt (about 1/8 tsp each), toss, and let sit 5 minutes to draw out excess moisture. After 5 minutes, gently squeeze and pat dry with paper towels.

Boiled Eggs

Place eggs in a small pot, cover with cold water, bring to a boil, then reduce heat and simmer 7–8 minutes for medium-firm yolks or 10–11 minutes for fully hard yolks. Transfer eggs to ice water for 5 minutes, peel, and halve.

Cook Beef

Season the thinly sliced beef with 1 tbs soy sauce, 1 tsp sugar, 1 tsp sesame oil, 1 tsp minced garlic, 1/4 tsp black pepper and 1/8 tsp salt. Heat a skillet over medium-high heat, add a small drizzle of oil, then quickly stir-fry the beef slices until browned and just cooked through, 2–3 minutes. Remove from heat and set aside. Sprinkle with 1 tsp toasted sesame seeds and 1 tbs thinly sliced scallion.

Assemble Bibim Naengmyeon

Divide the chilled, drained noodles between 2–3 serving bowls (serves 2–3 depending on appetite).

Add 1 generous 1.5–2 tbs (or more to taste) of the bibim sauce per bowl on top of the noodles. Toss the noodles and sauce well directly in the bowl (use tongs or chopsticks) until noodles are evenly coated. If the sauce feels too thick, add a teaspoon or two of the reserved cold water or ice water to loosen.

Arrange the julienned cucumber and radish on top of the sauced noodles. Place a halved boiled egg and a portion of the cooked beef on each bowl. Sprinkle additional sesame seeds and sliced scallion over the top. Add a few ice cubes or pour a couple tablespoons of cold water around the edges if you prefer extra chill.

Serve immediately with optional vinegar and extra gochugaru on the side for diners to adjust acidity and heat. To eat, mix everything thoroughly in the bowl and enjoy.
