Prepare rice

If not already cooked, rinse 1 1/4 cups uncooked short-grain rice until water runs clear and cook according to your rice cooker or stovetop method to yield about 3 cups cooked rice. Keep warm. When ready to assemble, fluff rice and toss with 1 tsp sesame oil to keep grains separate and add aroma.

Kimchi & kimchi seasoning

Prepare kimchi

Chop 1 cup well-fermented kimchi into bite-size pieces. In a small bowl, combine chopped kimchi with 2 tbsp kimchi juice, 1 tsp sugar, 2 tbsp gochujang, and 1 tsp sesame oil. Mix well and taste — the goal is a spicy, tangy, slightly sweet kimchi mixture. Set aside to let flavors meld while you prepare the other components.

Sauté zucchini and carrot

Heat 1 tsp vegetable oil in a skillet over medium-high heat. Add julienned zucchini with a pinch (about 1/8 tsp) of salt and sauté 2–3 minutes until just tender but not mushy. Transfer to a bowl. Wipe pan, add another 1 tsp oil, add carrots and a pinch of salt, sauté 2–3 minutes until slightly softened, then transfer to a bowl.

Blanch spinach and bean sprouts

Bring a pot of water to a boil. Add spinach and blanch 30 seconds, then immediately plunge into ice water; squeeze out excess water and season with 1/2 tsp sesame oil, a pinch of salt, and half the minced garlic (about 1 clove) tossed together. For bean sprouts, blanch 1 minute, drain, then season with 1/2 tsp sesame oil, a pinch of salt, and the other half clove minced garlic. Toss and set aside.

Finish vegetable toppings

Sprinkle 1 tbsp toasted sesame seeds over vegetables and add thinly sliced green onion to the spinach for freshness. Keep each vegetable in separate small bowls for plating classic bibimbap style.

Protein & garnish

Prepare optional protein

If using cooked ground beef or firm tofu: heat a small pan over medium, add 1 tsp sesame oil, add protein and 1 tsp soy sauce, cook until warmed and slightly caramelized (3–5 minutes). Set aside.

Fry eggs

In a nonstick skillet, heat 1 tsp vegetable oil over medium-high. Crack eggs and fry sunny-side up until whites are set and edges are lacy but yolks still runny (about 2–3 minutes). For over-easy yolks, flip and cook 15–30 seconds more. One egg per serving.

Sauce (bibimbap gochujang sauce)

Make the sauce

In a small bowl whisk together 2 tbsp gochujang, 1 tsp sesame oil, 1 tsp rice vinegar, 1 tsp soy sauce, 1 tsp honey or sugar, and 1 tsp water. Adjust sweetness or acidity to taste. The sauce should be thick but spoonable.

Assemble & serve

Divide warm rice among 4 bowls (about 3/4 cup cooked rice per bowl). Arrange small mounds of seasoned kimchi, sautéed zucchini, sautéed carrot, blanched spinach, blanched bean sprouts, and optional cooked protein on top of each rice bowl in separate sections to create a colorful circle.

Place a fried egg on top of each bowl. Drizzle about 1/2–1 tbsp of the prepared gochujang sauce over each bowl (or serve sauce on the side). Finish with a sprinkle of toasted sesame seeds and the thinly sliced green onion. If desired, add extra kimchi juice or kimchi mixture for heat.

To eat, mix everything thoroughly so rice, vegetables, kimchi, egg yolk and sauce are combined. Serve immediately.
