Method
Syrup
Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Stir over medium heat until the sugar completely dissolves and the mixture just comes to a simmer. Do not boil vigorously. Once dissolved, remove from heat.
Add citrus and acid
Stir in 2 tablespoons fresh lemon juice, 2 tablespoons fresh lime juice, and 1 teaspoon citric acid into the warm syrup until fully dissolved. The citric acid adds bright sourness similar to commercial Sprite.
Adjust mouthfeel (optional)
If you want a slightly fuller mouthfeel closer to a commercial soda, whisk in 1 teaspoon food-grade glycerin while the syrup is warm. This is optional; skip if you prefer a lighter result.
Cool and top up
Allow the syrup to cool to room temperature. If it seems too concentrated, stir in up to 2 tablespoons cold filtered water to reach desired intensity. Chill the syrup in the refrigerator for at least 15 minutes before assembling the drink.
Assembly
Prepare glassware: Fill a 16‑ounce (about 2-cup capacity) pitcher or two tall glasses with 2 cups ice (split between glasses as desired).
Combine syrup and soda: For each 8-ounce serving, add 2 tablespoons of the prepared lemon-lime syrup to the glass (equivalent ratio: about 1 part syrup to 8 parts carbonated water). Pour 1 cup (8 fl oz) chilled club soda over the syrup and ice.
Stir gently: Use a spoon to gently stir once or twice to incorporate syrup without losing too much carbonation.
Storage: Keep unused syrup refrigerated in a sealed jar for up to 10 days. Stir before using. Keep carbonated water chilled and only mix at serving time to preserve fizz.
