Pork & Marinade
prepare ribs
Pat the 3 pork rib pieces dry with paper towel. Trim any excessive fat but leave some for flavor. Lightly score the meat surface where the bones are to help marinade penetration.
make marinade
In a large bowl combine 1 cup soy sauce, 3 tbsp brown sugar, 1 tbsp honey, 2 tbsp rice wine (mirin), 1 tbsp sesame oil, 6 minced garlic cloves, 1 tbsp grated ginger, 1/4 cup grated Korean pear (or 1/4 cup apple juice), 1 tsp gochujang (optional), and 1 tsp freshly ground black pepper. Whisk until sugar dissolves and mixture is homogenous.

Place the rib pieces in a resealable bag or shallow dish. Pour the marinade over the ribs making sure they are well coated. Add the sliced scallions into the bag. Press out excess air and refrigerate for at least 6 hours, preferably overnight (8–12 hours) for best flavor. Occasionally turn the bag so marinade distributes evenly.
Glaze & Grilling
prepare glaze
About 20 minutes before grilling, mix 1 tbsp honey (or brown sugar), 1 tsp soy sauce, and 2 tbsp water in a small bowl. This will be used for basting and to create a shiny glaze during the final grill stage.
remove excess marinade & reserve
Remove ribs from marinade and allow excess to drip off. Reserve the remaining marinade to be boiled (see next step).
boil reserved marinade
Pour the reserved marinade into a small saucepan and bring to a rolling simmer over medium heat. Simmer 3–5 minutes to kill any raw pork bacteria and slightly thicken. Reduce heat and set aside; this can be brushed on early in grilling if desired.
cook through
After searing, reduce direct heat to medium or move ribs to indirect heat. Continue cooking, turning every 4–6 minutes, brushing occasionally with boiled reserved marinade until internal temperature reaches 145°F (63°C) and meat is tender (total grilling time approximately 20–30 minutes depending on thickness).
rest
Remove ribs from heat and let rest on a cutting board for 5 minutes to allow juices to redistribute.
Finishing & Serving
slice & garnish
If ribs are on bone, serve whole as 3 pieces or slice between bones into individual portions. Sprinkle toasted sesame seeds and additional thinly sliced scallions over the glazed meat.
serve
Plate each rib with lettuce or ssam leaves, a small spoonful of ssamjang or gochujang if desired, and pickled radish or kimchi on the side. Eat by wrapping a piece of rib in a leaf with sauce and banchan.
