Rice
Rinse 2 cups short-grain rice under cold water until the water runs mostly clear to remove excess starch. Drain and place in a rice cooker or pot with 2.2 cups water. Let soak 20–30 minutes if time allows for better texture. Cook according to your rice cooker instructions or bring to a boil on the stove, then reduce heat to low and simmer 12–15 minutes until water is absorbed. Remove from heat and let steam, covered, for 10 minutes. Fluff with a rice paddle and stir in 1 tsp sesame oil to coat the grains.
Kimchi & Toppings
Prepare Kimchi
Chop 1 cup well-fermented kimchi into bite-sized pieces. Squeeze out excess liquid lightly and reserve 2 tbsp kimchi juice for seasoning the rice or sauce. If you prefer a saucier bibimbap, roughly chop and pan-fry the kimchi for extra caramelization as below.
Sauté Vegetables
Wipe skillet and heat 1 tsp vegetable or neutral oil over medium. Take each vegetable individually to keep flavors distinct: lightly salt zucchini and sauté 1 cup julienned zucchini for 2–3 minutes until tender; remove and keep warm. Sauté 1 cup sliced shiitake mushrooms in 1/2 tsp oil with a pinch of salt for 2–3 minutes; remove. Sauté 1 cup julienned carrot for 2–3 minutes until just tender; remove. For bean sprouts: blanch 1 cup in boiling water 30–45 seconds, drain, then toss with 1/2 tsp sesame oil and a pinch of salt. For spinach: blanch 1 cup spinach 15–30 seconds, drain, squeeze out liquid and toss with 1/2 tsp sesame oil, 1/4 tsp soy sauce and a pinch of garlic if desired. Return all prepared vegetables to separate bowls.
Sauce (Gochujang Bibim Sauce)
Whisk together 2 tbsp gochujang, 1 tsp sesame oil, 1 tsp rice vinegar, 1 tsp sugar (or honey) and 1 tsp water in a small bowl until smooth. Taste and adjust: add more sugar for sweetness, more vinegar for tang, or a little more water to loosen. Set aside.
Assemble in Dolsot & Finish
Add Rice and Create Scorched Crust
Spoon the hot rice into the oiled dolsot, pressing gently to form an even layer. Drizzle a little sesame oil or remaining kimchi juice over the rice surface (about 1 tsp) to encourage crisping. Return to medium-low heat and let cook undisturbed 3–6 minutes until you hear a light crackling and the bottom begins to crisp into a golden crust (nurungji). Watch carefully to avoid burning.
Arrange Toppings
Remove the dolsot from heat. Arrange the prepared vegetables (zucchini, mushrooms, carrots, bean sprouts, spinach), cooked kimchi, and cooked ground meat in separate sections over the rice to create a colorful pattern. Place 2 eggs on top (raw or fried): for raw eggs, crack them in the center; for fried eggs, fry in a separate pan sunny-side-up and place on top. Sprinkle shredded dried seaweed (if using), 1 tsp toasted sesame seeds, and sliced scallions over everything. Season eggs with a pinch of salt and 1/4 tsp black pepper if desired.
Serve
Bring the hot dolsot to the table immediately. Each diner mixes the bibimbap thoroughly with the gochujang sauce to their taste, scraping the crispy rice from the bottom so everyone gets some nurungji. Enjoy while hot; the dolsot will continue to crisp the rice at the bottom as you eat.
