Cocktail Sauce

Combine and adjust
In a medium bowl, whisk together 1 cup ketchup, 2 tablespoons prepared horseradish, 1 tablespoon fresh lemon juice, 1 teaspoon Worcestershire sauce and 1 teaspoon hot sauce (optional) until smooth.

Season with 1 teaspoon salt and 1 teaspoon freshly ground black pepper. Taste and adjust: add more horseradish for heat, more lemon for brightness, or a pinch of sugar if too sharp.

Transfer to a container, refrigerate at least 30 minutes to let flavors meld. Keeps up to 7 days refrigerated.
Tartar Sauce

Mix base
In a small bowl, mix 1 cup mayonnaise with 1 tablespoon finely chopped dill pickles and 1 teaspoon chopped capers until combined.

Stir in 2 teaspoons minced shallot (or red onion), 1 teaspoon fresh lemon juice and 1 tablespoon finely chopped fresh dill (or 1/2 teaspoon dried).

Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust acidity or sweetness by adding a little more lemon juice or a pinch of sugar if desired.

Chill at least 30 minutes for flavors to marry. Keeps up to 5–7 days refrigerated in a sealed container.
Sour Cream Sauce (Herbed Sour Cream)

Combine ingredients
In a bowl, stir together 1 cup sour cream and 2 tablespoons mayonnaise (optional) until smooth.

Fold in 1 tablespoon chopped chives, 1 teaspoon chopped parsley, 1 teaspoon fresh lemon juice and 1/4 teaspoon garlic powder.

Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust herbs, lemon, or salt to preference.

Refrigerate at least 20 minutes before serving. Keeps up to 5 days refrigerated.
Honey Butter

Whip butter and honey
Place 1/2 cup softened unsalted butter in a bowl. Add 3 tablespoons honey and 1/4 teaspoon sea salt. Using a fork or hand mixer, whip until light and spreadable (about 1–2 minutes).

If desired, stir in 1/8 teaspoon ground cinnamon and 1/2 teaspoon lemon zest for extra depth.
