Prepare lettuce
Trim and discard any wilted outer leaves from the romaine. Chop the romaine hearts into 1- to 1.5-inch pieces, rinse under cold water, and spin or pat dry thoroughly. Place the dried lettuce in a large salad bowl and chill briefly while you make the dressing (optional). Measure and have the grated Parmesan and croutons ready.

Add grated Parmesan and croutons to the bowl with the lettuce just before tossing.

Combine base ingredients
In a medium bowl, whisk together the mayonnaise and Greek yogurt until smooth. Add the lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and anchovy paste (if using). Whisk until combined.

Finish and season
Stir in the 2 tbs grated Parmesan, then season with salt and freshly ground black pepper. Taste and adjust: add more lemon juice for brightness, more salt or Parmesan for umami, or a little water (1 tsp at a time) to thin if too thick.

Dress the salad
Pour about half the dressing over the chilled lettuce, then add the grated Parmesan and croutons. Gently toss with salad tongs until leaves are evenly coated. Add more dressing as needed to lightly coat (you likely will use between 3 to 6 tbs total depending on preference). Serve immediately.
