Preparation of Turkey

Preheat the Oven
Preheat your oven to 325°F (165°C).

Prepare the Turkey
Remove the turkey giblets and neck from the cavity. Pat the turkey dry with paper towels.

Season the Turkey
Rub the whole turkey with olive oil, then generously season with salt and black pepper both inside and out. Stuff the cavity with garlic cloves, onion (quartered), carrots, and celery.

Herb Infusion
Chop the fresh rosemary and thyme, and sprinkle them over the turkey for additional flavor.

Roasting the Turkey
Place the turkey on a rack in a roasting pan. Roast in the preheated oven for about 15 minutes per pound. For a 12-pound turkey, this will take about 3 hours. Baste the turkey every 30 minutes with the drippings.

Check for Doneness
The turkey is done when the internal temperature reaches 165°F (75°C) in the thickest part of the thigh. Let it rest for at least 20 minutes before carving.

Collect the Drippings
Once the turkey is done, remove it from the roasting pan and pour the drippings into a measuring cup.

Add Broth
Slowly whisk in the chicken broth, continuing to stir until the gravy thickens. Season with salt and black pepper to taste.

Serve the gravy hot alongside the carved turkey.
