Burger Preparation

    Prepare the Beef Patties

    In a bowl, mix the Angus ground beef with salt and black pepper. Divide the mixture into two equal portions and shape them into burger patties. Make them slightly larger than the brioche buns as they will shrink while cooking.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on each side or until they reach your desired doneness. In the last minute of cooking, place two slices of cheddar cheese on each patty, allowing them to melt.

    Toast the Buns

    While the patties are cooking, cut the brioche buns in half and toast them on the grill or in a toaster until golden brown.

Pork Belly Bacon Preparation

    Prepare the Pork Belly

    Season the pork belly with salt and black pepper. Cut it into strips.

    Cook the Bacon

    In a skillet over medium heat, cook the pork belly strips until crispy, about 10-12 minutes. Remove and drain on paper towels.

Garlic Aioli Preparation

    Make the Garlic Aioli

    In a small bowl, combine the mayonnaise, minced garlic cloves, lemon juice, and salt. Stir until well mixed and set aside.

Pickled Onions Preparation

    Pickle the Onions

    Slice the red onion thinly and place in a jar. In a saucepan, combine white vinegar, sugar, and salt, and bring to a boil. Pour the hot mixture over the onions in the jar and let sit for at least 30 minutes.

French Fries Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into French fry shapes. Soak in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Drain and dry the soaked fries, then fry in batches until golden and crispy, about 4-5 minutes per batch. Drain on paper towels and season with salt.

Assembly

    Assemble the Burger

    On the bottom half of each toasted brioche bun, spread a generous amount of garlic aioli. Place one beef patty on top, followed by two strips of crispy pork belly bacon. Add pickled onions on top and finish with the top half of the bun.

    Serve the assembled burgers with a side of crispy French fries.
