Turkey Preparation

Prepare the Turkey
Preheat your oven to 325°F (165°C). Remove the turkey from the fridge and allow it to come to room temperature for about 30 minutes.

Roast the Turkey
Place the turkey on a roasting rack in a roasting pan. Roast in the preheated oven, basting every 30 minutes, until the internal temperature reaches 165°F (75°C), about 3-4 hours depending on the size of the turkey.

Rest the Turkey
Once done, remove the turkey from the oven and let it rest for at least 30 minutes before carving.
Gravy Preparation

Make Gravy
After resting the turkey, pour the drippings from the roasting pan into a saucepan. Skim off excess fat, leaving about 1/4 cup of fat in the pan.

Thicken the Gravy
Sprinkle the flour into the pan and whisk continuously for about 2 minutes until golden brown. Gradually whisk in the chicken broth until smooth.

Simmer the Gravy
Simmer the gravy over medium heat, stirring frequently, until thickened, about 10-15 minutes. Season with salt and pepper to taste.

Finish the Sauce
Simmer for about 10-15 minutes, until the cranberries burst and the sauce thickens. Stir in lemon juice and remove from heat.
