Method

Pasta Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Vegetable Preparation

  1. 2

    Prepare the Vegetables

While the pasta is cooking, prepare the vegetables. Slice the bell peppers, zucchini, and carrots; halve the cherry tomatoes; and cut the broccoli into florets. Set aside.

Sauce Preparation

  1. 3

    Make the Garlic Sauce

In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant but not browned.

Combine and Serve

  1. 4

    Combine Everything

Add the prepared vegetables to the skillet and sauté for about 5-7 minutes until they are tender but still crisp. Add the cooked pasta and reserved pasta water to the skillet, tossing everything together.

  2. 5

    Season and Garnish

Season with salt and black pepper to taste. Stir in the chopped fresh basil and grated Parmesan cheese. Serve hot, garnished with additional Parmesan if desired.
