Crust Preparation

Make the Dough
In a mixing bowl, combine all-purpose flour and salt. Add the cold, cubed unsalted butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Do not overwork the dough.

Chill the Dough
Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Filling Preparation

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Filling
In a medium bowl, whisk together the eggs and milk until well combined. Stir in the shredded cheddar cheese, chopped spinach, crumbled bacon, salt, black pepper, and nutmeg.
Assembly and Baking

Roll Out the Dough
On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles using a cookie cutter or a glass, and place them into a greased mini muffin tin.

Fill the Quiches
Spoon the egg filling into each crust, filling them about 3/4 full.

Bake the Quiches
Bake in the preheated oven for 18-20 minutes, or until the egg is set and the tops are lightly golden.

Cool and Serve
Remove the mini quiches from the oven and allow them to cool slightly before removing from the tin. Serve warm or at room temperature.
