Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

Combine Mixtures
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cakes
Once baked, remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Seville Orange Syrup Preparation

Prepare the Syrup
Juice the Seville oranges and combine the juice, sugar, and water in a small saucepan.

Cook the Syrup
Bring the mixture to a gentle boil over medium heat. Reduce heat and simmer for about 10 minutes, or until slightly thickened. Set aside to cool.
Cream Cheese Frosting Preparation

Make the Frosting
In a mixing bowl, beat the cream cheese and butter together until creamy and smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Assemble the Cake

Layer the Cake
Once the cakes are completely cool, place one layer on a serving platter. Drizzle a portion of the Seville orange syrup over the top.

Frost the Cake
Spread a layer of cream cheese frosting over the syrup. Place the second cake layer on top and repeat the process with the syrup and frosting.

Frost the sides of the cake with the remaining cream cheese frosting. Decorate as desired.
