For the Herb Roasted Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat it dry with paper towels.

    Season the Chicken

    In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this mixture all over the chicken, including under the skin.

    Stuff the Chicken

    Cut the lemon in half and place it inside the cavity of the chicken.

    Roast the Chicken

    Place the chicken breast side up in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).

    Let it Rest

    Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

For the Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into even pieces. Place them in a pot of salted water and bring to a boil. Cook for 15-20 minutes or until tender.

    Prepare the Garlic

    While the potatoes are boiling, peel and mince the garlic cloves.

    Mash the Potatoes

    Once the potatoes are tender, drain them and return them to the pot. Add the butter, milk, minced garlic, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Serve the garlic mashed potatoes alongside the herb roasted chicken.
