Prepare the Bread
Take 4 slices of sourdough bread and lay them out on a clean surface.

Add Cheese
Place 2 slices of cheddar cheese on 2 of the slices of bread.

Assemble the Sandwich
Top the cheese with the remaining slices of bread, creating two sandwiches.

Butter the Bread
Spread 1 tablespoon of butter on the outer side of each sandwich.

Slice and Serve
Remove from skillet, slice in half, and serve warm.
Tomato Soup

Add Tomatoes and Broth
Add the canned diced tomatoes (with juices) and 2 cups of vegetable broth to the pot. Stir to combine.

Season the Soup
Add salt, pepper, and basil to the pot. Stir well and bring the mixture to a simmer.

Simmer
Let the soup simmer for about 15 minutes, allowing the flavors to meld together.

Blend the Soup
Using an immersion blender or a standard blender, blend the soup until smooth. If using a standard blender, blend in batches and be careful of hot splashes.

Ladle the soup into bowls and serve alongside the grilled cheese sandwiches.
