Gelato Preparation

    Create the Gelato Base

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves completely.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks and vanilla extract until well combined.

    Temper the Egg Yolks

    Slowly pour the warm milk mixture into the egg yolk mixture, whisking continuously to prevent the yolks from scrambling.

    Cook the Mixture

    Return the mixture to the saucepan. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

    Cool the Mixture

    Remove from heat and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Flavoring the Gelato

    Prepare Dark Chocolate Gelato

    Melt the dark chocolate in a double boiler or microwave. Once the gelato base is cool, fold in the melted chocolate until fully incorporated.

    Prepare Strawberry Gelato

    Puree the fresh strawberries using a blender or food processor. Fold the strawberry puree into another portion of the cooled gelato base.

    Churn the Gelato

    Pour each flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the churned gelato to airtight containers and freeze for at least 4 hours or until firm.

Serving

    Serve the Gelato Duo

    Scoop out the dark chocolate and strawberry gelato into bowls or cones. Optionally, garnish with chopped pistachios for added texture.
