For the Fried Chicken

Marinate the Chicken
In a bowl, combine the buttermilk and chicken breasts. Ensure the chicken is fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Coating
In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Fry the Chicken
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coat. Carefully place chicken in hot oil and fry for 5-7 minutes per side or until golden brown. Remove and place on paper towels to drain excess oil.
For the Dijon Cream Cheese

Make the Cream Cheese Spread
In a small bowl, combine cream cheese, Dijon mustard, and a pinch of salt. Mix until smooth and well combined.
For the Sandwich Assembly

Toast the Brioche Buns
Lightly toast the brioche buns on a skillet or in a toaster until golden brown.

Assemble the Sandwich
Spread the Dijon cream cheese on the bottom half of the toasted brioche bun. Place a piece of fried chicken on top, add pickles, and then cover with the top half of the bun.

Serve the sandwich alongside a generous portion of French fries.
