Preparation

    Char the Pineapple

    Heat a grill or a grill pan over medium-high heat. Grill the pineapple slice for about 2-3 minutes on each side, or until you see nice grill marks and the fruit becomes caramelized. Remove from heat and set aside.

    Prepare the Clove Demerara Syrup

    In a small saucepan, combine equal parts sugar and water (for example, 1 cup each) and add whole cloves. Heat over medium heat until the sugar dissolves, then let it simmer for about 10 minutes. Remove from heat, let it cool, and strain out the cloves.

Mixing the Cocktail

    Combine Ingredients

    In a cocktail shaker, add the high proof bourbon, aged rum, charred pineapple (muddled), and clove demerara syrup. Fill the shaker with ice.

    Shake and Strain

    Shake the mixture vigorously for about 15 seconds until well chilled. Strain the cocktail into a chilled rocks glass filled with fresh ice.

    Add Bitters

    Add 2 dashes each of black walnut bitters and Angostura bitters on top of the cocktail.

    Garnish the Cocktail

    Garnish the drink with a pineapple leaf and a pinch of ground cinnamon for added aroma and flavor.
