To Prepare the Tart Crust

Make the Dough
In a mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add Wet Ingredients
Stir in the egg yolk and ice water until the dough comes together. If too dry, add more water, a teaspoon at a time.

Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Roll Out the Dough
On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.

Blind Bake
Preheat the oven to 350°F (175°C). Line the tart shell with parchment paper and fill it with pie weights or dried beans. Bake for 15 minutes, then remove the weights and bake for an additional 10 minutes until set.
To Make the Chocolate Filling

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and heavy cream. Place over a pot of simmering water (double boiler) and stir until melted and smooth.

Remove from heat, whisk in granulated sugar, eggs, and vanilla extract until fully combined.

Fill the Tart Shell
Pour the chocolate filling into the pre-baked tart shell, smoothing the top with a spatula.

Bake Again
Bake in the oven for 20-25 minutes, until the filling is set but still slightly jiggly in the center. Allow to cool completely before removing from the pan.
To Serve the Tart

Whip the Cream
In a mixing bowl, beat the heavy cream and powdered sugar until soft peaks form.

Slice and Serve
Slice the cooled chocolate tart into wedges. Serve each slice with a dollop of whipped cream and a handful of fresh berries.
